Basic Fried Tomatoes

Core tomatoes (but donīt peel). Cut into slices about 1/2 inch thick, and dip into flour. Melt butter or bacon fat, fry slices until brown on the bottom. Turn. Season with Montreal Style BBQ Rub - or just plain old salt and pepper. Serve when brown on both sides.
