Corn

When cooking corn, make sure not to add salt to the water. Salt will only toughen the corn.
Add salt, if desired. only after the corn is cooked.

Silk Removal

To remove corn silk, dampen a paper towel, and brush downward on the cob, and all the silk should come off.

Sweetening Corn

Keep corn sweet by adding about a teaspoon of lemon juice to the water approximately a minute before you remove it from the stove. Adding sugar to the water works well too!

Store With Bayleaf

Boiling Vegetables

When boiling vegetables like carrots, peas, beets or corn, a loss of flavour occurs due to the natural sugars being boiled out. To help keep the sweet flavour simply add a teaspoon or so of sugar to the water when boiling.

Neutralising Hot Peppers

Pepper heat can be neutralized by some starchy foods, such as rice, corn or bread, by dairy products like cheese and yogurt and by sugar. If a dish is too hot, try using a little sugar, or serving over a bed of rice or with a spoonful of yogurt.

Boiling Corn

When boiling corn, there is often a loss of colour. To keep your sweet corn yellow, add one teaspoon of lemon juice to the cooking water just about a minute before taking off the stove.
