Preserving Horseradish

Dig up a piece of the root, wash, and scrape it under water to prevent eye irritation. To preserve it, place it in a screw top jar filled with vinegar or oil.

What time of year do you dig? When do you grind or pulverize? Do you add salt? How do you keep the finished products fresh color? I harvest in the fall. Personally, I harvest in the fall, wash, grind, add salt and vinegar and put into a screw top jar and store in the refrigerator

I thought it needed to be ground before putting it into the vinegar.It won't be an easy or comfortable job.
